2019 Hare Cabernet Merlot

Description:
The 2019 vintage in Niagara was marked by cool temperatures and abundant rainfall early in the season, creating challenges in the vineyard but ultimately producing wines of distinctive character. Later in the season, drier weather allowed grapes to remain on the vines longer, balancing acidity, sugar, and ripeness. An early frost in the fall further concentrated flavours in later-ripening varieties, bringing added depth and intensity to Bordeaux-style blends.
This Cabernet Merlot combines Cabernet Franc, Cabernet Sauvignon, and Merlot, aged for 18 months in a mix of new and used French oak. Together, these varietals showcase the harmony and complexity possible in Niagara’s cool-climate terroir.
The nose bursts with dark cherry, red plum, and raspberry jam, complemented by notes of licorice, black pepper, and fresh mint leaf. Subtle layers of clove and toast from oak aging add warmth and dimension. On the palate, the wine is equally expressive, with juicy fruit flavours lifted by bright acidity, a hallmark of the vintage. Medium-bodied and refined, it balances structure with elegance. The tannins provide length and framework without overshadowing the wine’s smooth, approachable texture.
The 2019 Cabernet Merlot is a refined expression of classic varietals, brought together seamlessly in a wine that is both elegant and inviting.
Food Recommendation:
Versatile and food-friendly, this blend pairs beautifully with a wide range of dishes. Try it with rich pasta dishes, a charcuterie board, or a pepper-crusted steak for a bold match. For a vegetarian option, a portobello mushroom burger brings out the wine’s earthy and savoury undertones. Enjoy it now for its vibrancy, or cellar through 2029 for greater complexity.
